Chicago Meat Authority (CMA) was founded in 1990 by Jordan Dorfman with the promise to be a different kind of meat processing company, the kind of company with which you?d feel confident doing business and proud to work for. CMA opened in the Historic Chicago Stockyards in a 10,000 square foot facility with 12 employees. By the end of 1990 CMA was producing 80,000 pounds a week of beef and pork. Today the CMA campus has 2 USDA-inspected facilities totaling 80,000 square feet of production, with the ability to process 3 million pounds of meat a week, shipping all over the world.
